Preparation Time: 2 hours; Total Time: 2 hrs, 10 min
Soak walnuts in water for 2 to 3 hours.
Drain walnuts and place in a food processor along with olive oil, tahini, cinnamon and ginger; process into a paste.
Add additional olive oil to reach desired consistency; the pate should be thick, but spreadable.
Serve with a platter of sliced cheese, crackers and cucumber slices.
